  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cups water
  • 4 large russet potatoes, thinly sliced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste

  1. Begin by preparing your vegetables: dice the onion, mince the garlic, thinly slice the potatoes, and chop the kale. This makes the cooking process smoother.
  2. In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage and cook until browned, about 5-7 minutes. Use a wooden spoon to break up the sausage into small pieces as it cooks.
  3. Once the sausage is browned, remove it from the pot and set it aside on a plate lined with paper towels to drain excess grease.
