- 1 pound Italian sausage (mild or spicy, depending on preference)
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3 cups water
- 4 large russet potatoes, thinly sliced
- 2 cups kale, chopped
- 1 cup heavy cream
- Salt and pepper to taste
- Red pepper flakes, optional

- Begin by preparing your vegetables: dice the onion, mince the garlic, thinly slice the potatoes, and chop the kale. This makes the cooking process smoother.
- In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage and cook until browned, about 5-7 minutes. Use a wooden spoon to break up the sausage into small pieces as it cooks.
- Once the sausage is browned, remove it from the pot and set it aside on a plate lined with paper towels to drain excess grease.
