Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 zucchini, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 1 tablespoon lime juice
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes. Stir occasionally to prevent burning.
  2. Add the chopped red and green bell peppers, carrots, and celery to the pot. Cook for another 5-7 minutes, stirring occasionally, until the vegetables start to soften.
  3. Stir in the chopped zucchini and cook for an additional 3 minutes. Ensure all the vegetables are well-mixed and beginning to soften.
  4. Add the drained black beans and kidney beans, crushed tomatoes, and vegetable broth to the pot. Stir well to combine all ingredients.
  5. Stir in the chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Mix well to ensure the spices are evenly distributed.
  6. Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 30 minutes. Stir occasionally to prevent sticking.
  7. After simmering, taste and adjust seasoning if necessary. You can add more salt, pepper, or cayenne pepper for a spicier kick.
  8. Stir in the lime juice and chopped cilantro just before serving. This will add a fresh, bright flavor to your chili.
  9. Serve the chili hot, garnished with additional cilantro if desired. You can also top with shredded cheese or a dollop of sour cream for extra richness.
