Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 carrots, diced
- 2 stalks celery, diced
- 1 zucchini, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 2 cups vegetable broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 1 tablespoon lime juice
- 1/4 cup chopped fresh cilantro
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes. Stir occasionally to prevent burning.
- Add the chopped red and green bell peppers, carrots, and celery to the pot. Cook for another 5-7 minutes, stirring occasionally, until the vegetables start to soften.
- Stir in the chopped zucchini and cook for an additional 3 minutes. Ensure all the vegetables are well-mixed and beginning to soften.
- Add the drained black beans and kidney beans, crushed tomatoes, and vegetable broth to the pot. Stir well to combine all ingredients.
- Stir in the chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Mix well to ensure the spices are evenly distributed.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 30 minutes. Stir occasionally to prevent sticking.
- After simmering, taste and adjust seasoning if necessary. You can add more salt, pepper, or cayenne pepper for a spicier kick.
- Stir in the lime juice and chopped cilantro just before serving. This will add a fresh, bright flavor to your chili.
