Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups cooked pulled pork
- 1 1/2 cups BBQ sauce
- 3 cups cooked pasta (e.g., elbow macaroni)
- 1 cup frozen corn, thawed
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley for garnish
Instructions
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
- In a medium saute pan, heat olive oil over medium heat. Add diced onion and cook for about 3-4 minutes until it becomes translucent, stirring occasionally.
- Add minced garlic to the pan and saute for another 1-2 minutes until fragrant, ensuring not to burn the garlic.
- In a large mixing bowl, combine cooked pulled pork, BBQ sauce, cooked pasta, corn, and the onion-garlic mixture. Add salt and pepper to taste, and stir until well combined.
- Transfer the pork mixture into an oven-safe casserole dish, spreading it evenly.
- In a small bowl, mix together the shredded cheddar cheese and sour cream. Spread this mixture over the top of the casserole evenly. If you like a crispy top, add an extra 1/2 cup of cheese before baking.
- Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15 minutes or until the cheese is melted and bubbly.
- Remove the casserole from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
- Enjoy your BBQ Pulled Pork Casserole with a green salad or steamed vegetables for a balanced meal.
