Ingredients

  • 1 tablespoon olive oil
  • 1 pound beef stew meat, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 8 cups beef broth
  • 1 cup pearl barley, rinsed
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce
  • 2 cups sliced mushrooms
  • 1 cup frozen peas

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season beef with salt and pepper and add to the pot. Brown the beef on all sides, about 5 minutes.
  3. Remove beef from the pot and set aside.
  4. In the same pot, add onions, garlic, carrots, and celery. Cook and stir for 5 minutes until the vegetables start to soften.
  5. Return the beef to the pot. Stir in the beef broth, barley, tomato paste, thyme, bay leaves, and Worcestershire sauce.
  6. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 1.5 hours, or until the beef and barley are tender.
  7. Add mushrooms and peas to the pot, cover, and cook for an additional 20 minutes.
  8. Remove bay leaves before serving.
