Ingredients
- 1 tablespoon olive oil
- 1 pound beef stew meat, cut into 1-inch pieces
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 cup chopped onions
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 8 cups beef broth
- 1 cup pearl barley, rinsed
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 tablespoon Worcestershire sauce
- 2 cups sliced mushrooms
- 1 cup frozen peas
Instructions
- Heat olive oil in a large pot over medium heat.
- Season beef with salt and pepper and add to the pot. Brown the beef on all sides, about 5 minutes.
- Remove beef from the pot and set aside.
- In the same pot, add onions, garlic, carrots, and celery. Cook and stir for 5 minutes until the vegetables start to soften.
- Return the beef to the pot. Stir in the beef broth, barley, tomato paste, thyme, bay leaves, and Worcestershire sauce.
- Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 1.5 hours, or until the beef and barley are tender.
- Add mushrooms and peas to the pot, cover, and cook for an additional 20 minutes.
- Remove bay leaves before serving.
