Ingredients

  • 2 tablespoons unsalted butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken or vegetable broth
  • 2 cups half-and-half
  • 4 cups broccoli florets, chopped
  • 2 cups sharp cheddar cheese, shredded
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste

Instructions

  1. Start by melting the butter in a large pot over medium heat. Once the butter is melted, add the chopped onion and sauté for about 3-4 minutes or until the onions become translucent.
  2. Add the minced garlic to the pot and sauté for another minute. Garlic can burn easily, so keep an eye on it.
  3. Sprinkle the flour over the onions and garlic. Stir constantly for about 2 minutes to cook the flour, creating a roux which will thicken your soup.
  4. Slowly pour in the chicken or vegetable broth, whisking continuously to prevent lumps. Keep cooking and stirring until the mixture starts to thicken slightly.
  5. Stir in the half-and-half, then add the chopped broccoli florets. Bring the mixture to a gentle simmer, reduce the heat to low, and cover the pot. Let it cook for about 15 minutes or until the broccoli is tender.
  6. Once the broccoli is tender, gradually add the shredded cheddar cheese, stirring until the cheese is completely melted and the soup is creamy. Make sure your heat is low to prevent the cheese from separating.
  7. Add the nutmeg and season the soup with salt and pepper to taste. Nutmeg adds a subtle depth of flavor, so a little goes a long way.
  8. Remove the pot from the heat. For a smoother texture, use an immersion blender to puree the soup to your desired consistency, or leave it chunky if you prefer.
  9. Taste and adjust seasoning as needed. Serve hot and enjoy your homemade broccoli cheddar soup!
