Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 red bell pepper, chopped
  • 2 (15 ounce) cans black-eyed peas, drained and rinsed
  • 1 (14.5 ounce) can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • 2 cups kale, chopped
  • 1 tablespoon fresh lemon juice

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Stir occasionally to prevent burning.
  2. Add minced garlic and sauté for another 1 minute, until fragrant.
