Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 red bell pepper, chopped
- 2 (15 ounce) cans black-eyed peas, drained and rinsed
- 1 (14.5 ounce) can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt, to taste
- Black pepper, to taste
- 2 cups kale, chopped
- 1 tablespoon fresh lemon juice
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Stir occasionally to prevent burning.
- Add minced garlic and sauté for another 1 minute, until fragrant.
