Ingredients

  • 1 tablespoon olive oil
  • 14 ounces kielbasa sausage, sliced into 1/4 inch rounds
  • 1 medium onion, thinly sliced
  • 1 small head cabbage, cored and sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon caraway seeds (optional)
  • 2 tablespoons apple cider vinegar
  • 1/4 cup chicken broth

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the sliced kielbasa sausage and brown on both sides, about 5 minutes. Remove the sausage from the skillet and set it aside on a plate.
  2. In the same skillet, add the sliced onion and cook until softened, about 3 minutes. Stir frequently to avoid burning.
  3. Add the sliced cabbage to the skillet, stirring occasionally, until it begins to soften, about 5-7 minutes. Use the wooden spoon to help stir and scrape up any browned bits from the bottom, which will add extra flavor.
  4. Stir in the minced garlic, salt, black pepper, and caraway seeds (if using). Cook for another 1 minute to let the flavors combine.
  5. Return the browned kielbasa to the skillet. Pour in the apple cider vinegar and chicken broth, stirring well to combine all ingredients. Lower the heat to medium-low and cover the skillet.
  6. Let the mixture simmer, covered, for about 5-7 minutes, or until the cabbage is tender to your liking. Taste and adjust seasoning if necessary.
  7. Remove the skillet from the heat. Serve the dish warm with a sprinkle of freshly ground black pepper and enjoy!
