Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 bay leaves
  • 1 1/2 pounds boneless, skinless chicken breasts
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 4 tablespoons butter, melted
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery. Cook for about 5 minutes, stirring occasionally, until the vegetables start to soften.
  2. Add minced garlic and cook for another minute until fragrant, being careful not to burn the garlic.
  3. Pour in chicken broth and add the dried thyme, dried rosemary, salt, pepper, and bay leaves. Stir to combine.
  4. Add the chicken breasts into the pot. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 25 minutes.
  5. While the chicken is simmering, make the dumplings. In a medium bowl, whisk together the flour, baking powder, and salt. Pour in the milk and melted butter, then stir until the mixture is just combined. Do not overmix.
  6. After 25 minutes, remove the chicken from the pot and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces.
  7. Return the shredded chicken to the pot. Drop spoonfuls of the dumpling batter onto the surface of the simmering soup. Cover the pot and cook for another 15 minutes, or until the dumplings are fluffy and cooked through. Do not lift the lid during this time, as the steam helps the dumplings cook properly.
  8. Taste and adjust the seasoning with more salt and pepper, if needed. Discard the bay leaves before serving.
  9. Garnish with freshly chopped parsley if desired, and serve hot.
