- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 pound boneless, skinless chicken breasts, cut into strips
- 1 cup mixed vegetables (such as peas and carrots), frozen or fresh
- 1 onion, finely chopped
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C). This will ensure your casserole cooks evenly.
- Lightly grease a 9×13 inch baking dish with cooking spray or a little olive oil. This prevents sticking and makes cleanup easier.
