Ingredients

  • 8 oz dried rice noodles
  • 1 tablespoon vegetable oil
  • 1 pound boneless, skinless chicken breast, sliced thinly
  • 1 red bell pepper, sliced thinly
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 tablespoons soy sauce
  • 3 tablespoons peanut butter
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon sriracha (optional, for heat)
  • 1/4 cup chopped peanuts
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Bring a large pot of salted water to a boil. Add the rice noodles and cook according to the package instructions until tender. Drain and rinse under cold water. Set aside.
