- 8 oz dried rice noodles
- 1 tablespoon vegetable oil
- 1 pound boneless, skinless chicken breast, sliced thinly
- 1 red bell pepper, sliced thinly
- 1 cup broccoli florets
- 1 carrot, julienned
- 3 tablespoons soy sauce
- 3 tablespoons peanut butter
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 tablespoon fish sauce
- 1 tablespoon sriracha (optional, for heat)
- 1/4 cup chopped peanuts
- 2 tablespoons chopped fresh cilantro

Instructions
- Bring a large pot of salted water to a boil. Add the rice noodles and cook according to the package instructions until tender. Drain and rinse under cold water. Set aside.
- In a large skillet, heat the vegetable oil over medium-high heat. Add the sliced chicken and cook for 5-7 minutes, or until fully cooked and no longer pink. Remove the chicken from the skillet and set aside.
