Ingredients

  • 2 tablespoons of olive oil
  • 1 pound of chicken breasts, cut into small cubes
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 8 ounces of mushrooms, sliced
  • 4 cups of chicken broth
  • 1 cup of heavy cream
  • 2 tablespoons of all-purpose flour
  • Salt and pepper, to taste
  • 1 tablespoon of butter
  • Fresh parsley, chopped, for garnish

Instructions

  1. First, gather all your ingredients and kitchen equipment. Having everything prepared will make the process smoother.
  2. In a large pot, heat the olive oil over medium heat. Once hot, add the chopped onions and sauté until they become translucent, about 5 minutes.
  3. Add the minced garlic to the pot and stir constantly for about 1 minute until fragrant, being careful not to burn the garlic.
  4. Increase the heat to medium-high and add the chicken cubes. Season with a pinch of salt and pepper, and cook until they are no longer pink on the outside, around 5-7 minutes.
  5. Add the sliced mushrooms to the pot and continue to cook for an additional 5 minutes, or until the mushrooms are golden brown and tender.
  6. Sprinkle the flour over the chicken and mushroom mixture. Stir well to combine and let it cook for about 1 minute – this will help thicken the soup.
  7. Gradually add the chicken broth, stirring constantly to prevent lumps. Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for 15 minutes, allowing the flavors to blend.
  8. Stir in the heavy cream and butter, mixing thoroughly. Let the soup simmer for an additional 5 minutes. Taste and adjust the seasoning with more salt and pepper if needed.
  9. Finally, turn off the heat and garnish the soup with freshly chopped parsley before serving for a splash of color and freshness.
