- 2 tablespoons of olive oil
- 1 pound of chicken breasts, cut into small cubes
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 8 ounces of mushrooms, sliced
- 4 cups of chicken broth
- 1 cup of heavy cream
- 2 tablespoons of all-purpose flour
- Salt and pepper, to taste
- 1 tablespoon of butter
- Fresh parsley, chopped, for garnish
Instructions
- First, gather all your ingredients and kitchen equipment. Having everything prepared will make the process smoother.
- In a large pot, heat the olive oil over medium heat. Once hot, add the chopped onions and sauté until they become translucent, about 5 minutes.
- Add the minced garlic to the pot and stir constantly for about 1 minute until fragrant, being careful not to burn the garlic.
- Increase the heat to medium-high and add the chicken cubes. Season with a pinch of salt and pepper, and cook until they are no longer pink on the outside, around 5-7 minutes.
- Add the sliced mushrooms to the pot and continue to cook for an additional 5 minutes, or until the mushrooms are golden brown and tender.
- Sprinkle the flour over the chicken and mushroom mixture. Stir well to combine and let it cook for about 1 minute – this will help thicken the soup.
- Gradually add the chicken broth, stirring constantly to prevent lumps. Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for 15 minutes, allowing the flavors to blend.
