Ingredients

  • 1 cup wild rice, rinsed
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound mushrooms, sliced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Rinse the wild rice thoroughly in a sieve under cold running water. This removes excess starch and prevents the rice from becoming gummy.
  2. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Add the sliced mushrooms to the pot. Cook for another 5-7 minutes until the mushrooms are golden brown and have released their moisture.
  4. Pour in the 4 cups of broth and stir in the rinsed wild rice. Add dried thyme, black pepper, and salt. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 45 minutes, or until the wild rice is tender.
  5. In a small saucepan over medium heat, melt the 2 tablespoons of butter. Stir in the flour, cooking for 1-2 minutes until it forms a paste. Slowly whisk in the heavy cream to avoid lumps, cooking until the mixture thickens.
