Ingredients
- 1 cup wild rice, rinsed
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound mushrooms, sliced
- 4 cups chicken or vegetable broth
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1/2 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Rinse the wild rice thoroughly in a sieve under cold running water. This removes excess starch and prevents the rice from becoming gummy.
- In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the sliced mushrooms to the pot. Cook for another 5-7 minutes until the mushrooms are golden brown and have released their moisture.
- Pour in the 4 cups of broth and stir in the rinsed wild rice. Add dried thyme, black pepper, and salt. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 45 minutes, or until the wild rice is tender.
- In a small saucepan over medium heat, melt the 2 tablespoons of butter. Stir in the flour, cooking for 1-2 minutes until it forms a paste. Slowly whisk in the heavy cream to avoid lumps, cooking until the mixture thickens.
- Once the wild rice is fully cooked, stir the cream mixture into the soup pot. Allow the soup to simmer for another 5 minutes, stirring occasionally. This step slightly thickens the soup and enhances the creamy texture.
