Ingredients

  • 1 pound Italian sausage links (mild, hot, or sweet)
  • 1 tablespoon olive oil
  • 2 large bell peppers (one red and one green), sliced
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons tomato paste
  • 1/2 cup chicken broth

Instructions

  1. Heat the olive oil over medium heat in a large skillet. Once hot, add the Italian sausage links.
  2. Brown the sausages for about 5-7 minutes, turning occasionally, until all sides are evenly browned. Transfer the sausages to a plate and set aside.
  3. In the same skillet, add the sliced bell peppers and onion. Sauté for about 5 minutes until softened.
  4. Add the minced garlic, salt, black pepper, dried oregano, and red pepper flakes. Stir and cook for an additional minute until fragrant.
  5. Stir in the tomato paste and cook for another minute, letting it caramelize slightly for deeper flavor.
  6. Add the chicken broth and return the sausages to the skillet along with any juices that have accumulated on the plate. Bring to a simmer.
  7. Cover the skillet and let the dish simmer for about 10-15 minutes, or until the sausages are cooked through.
  8. Serve the sausages with peppers and onions over cooked pasta, rice, or crusty bread.
