Ingredients
- 1 pound Italian sausage links (mild, hot, or sweet)
- 1 tablespoon olive oil
- 2 large bell peppers (one red and one green), sliced
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons tomato paste
- 1/2 cup chicken broth
Instructions
- Heat the olive oil over medium heat in a large skillet. Once hot, add the Italian sausage links.
- Brown the sausages for about 5-7 minutes, turning occasionally, until all sides are evenly browned. Transfer the sausages to a plate and set aside.
- In the same skillet, add the sliced bell peppers and onion. Sauté for about 5 minutes until softened.
- Add the minced garlic, salt, black pepper, dried oregano, and red pepper flakes. Stir and cook for an additional minute until fragrant.
- Stir in the tomato paste and cook for another minute, letting it caramelize slightly for deeper flavor.
- Add the chicken broth and return the sausages to the skillet along with any juices that have accumulated on the plate. Bring to a simmer.
- Cover the skillet and let the dish simmer for about 10-15 minutes, or until the sausages are cooked through.
- Serve the sausages with peppers and onions over cooked pasta, rice, or crusty bread.
