Ingredients
- 1 tablespoon vegetable oil
- 1/2 pound ground pork
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons doubanjiang (fermented broad bean paste)
- 1 tablespoon douchi (fermented black beans), rinsed and chopped
- 1 tablespoon soy sauce
- 1/2 cup chicken broth
- 1 block (14 ounces) soft tofu, cut into 1-inch cubes
- 1 teaspoon cornstarch mixed with 2 tablespoons water
- 2 teaspoons sesame oil
- 2 green onions, chopped
- 1 teaspoon ground Sichuan peppercorns
- Salt, to taste
Instructions
- Gather and prepare all ingredients. Mince the garlic and ginger, chop the green onions, and cube the tofu.
- Heat a wok or large frying pan over medium-high heat and add the vegetable oil. Once hot, add the ground pork and cook until browned, about 5-7 minutes, breaking it up with a spoon as it cooks.
- Add the minced garlic and ginger to the pork and stir-fry until fragrant, about 1 minute.
- Stir in the doubanjiang and douchi, allowing them to fry for another minute. Then add the soy sauce and chicken broth, mixing well to combine.
- Gently add the tofu cubes, stirring carefully to avoid breaking them. Simmer the mixture for 5 minutes. Then stir in the cornstarch mixture and cook for another 2 minutes until the sauce thickens.
- Drizzle the sesame oil over the dish, add the ground Sichuan peppercorns, and adjust seasoning with salt if needed. Scatter chopped green onions on top.
- Carefully ladle the Mapo Tofu into a serving dish. Serve hot, typically with steamed rice. Enjoy your delicious, spicy meal!
