Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 pound ground pork
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons doubanjiang (fermented broad bean paste)
  • 1 tablespoon douchi (fermented black beans), rinsed and chopped
  • 1 tablespoon soy sauce
  • 1/2 cup chicken broth
  • 1 block (14 ounces) soft tofu, cut into 1-inch cubes
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 2 teaspoons sesame oil
  • 2 green onions, chopped
  • 1 teaspoon ground Sichuan peppercorns
  • Salt, to taste

Instructions

  1. Gather and prepare all ingredients. Mince the garlic and ginger, chop the green onions, and cube the tofu.
  2. Heat a wok or large frying pan over medium-high heat and add the vegetable oil. Once hot, add the ground pork and cook until browned, about 5-7 minutes, breaking it up with a spoon as it cooks.
  3. Add the minced garlic and ginger to the pork and stir-fry until fragrant, about 1 minute.
  4. Stir in the doubanjiang and douchi, allowing them to fry for another minute. Then add the soy sauce and chicken broth, mixing well to combine.
  5. Gently add the tofu cubes, stirring carefully to avoid breaking them. Simmer the mixture for 5 minutes. Then stir in the cornstarch mixture and cook for another 2 minutes until the sauce thickens.
  6. Drizzle the sesame oil over the dish, add the ground Sichuan peppercorns, and adjust seasoning with salt if needed. Scatter chopped green onions on top.
  7. Carefully ladle the Mapo Tofu into a serving dish. Serve hot, typically with steamed rice. Enjoy your delicious, spicy meal!
