Ingredients

  • 2 packs (3 oz each) instant ramen noodles, discard seasoning packets
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 medium carrot, julienned
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 3 green onions, sliced
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon sriracha (optional, for heat)
  • Sesame seeds, for garnish
  • Chopped fresh cilantro, for garnish

Instructions

  1. Fill a large pot with water and bring to a boil over medium-high heat. Add the ramen noodles and cook for 2-3 minutes until just softened. Drain and set aside in a colander.
  2. In the same pot (now empty), heat 2 tablespoons of vegetable oil over medium heat. Add the minced garlic and grated ginger. Stir constantly for about 30 seconds until fragrant.
  3. Add the julienned carrot, sliced red bell pepper, and broccoli florets to the pot. Stir-fry for 5-7 minutes, or until the vegetables are just tender.
  4. While the vegetables are cooking, in a small bowl, whisk together the soy sauce, hoisin sauce, sesame oil, honey, and sriracha (if using) to create the stir-fry sauce.
  5. Add the drained noodles back to the pot with the vegetables. Pour the stir-fry sauce over the noodles and vegetables. Toss everything together using a pair of tongs or a large wooden spoon to ensure the noodles are evenly coated in the sauce.
  6. Stir in the sliced green onions and continue cooking for an additional 2 minutes to heat through. Taste and adjust seasoning if necessary.
  7. Remove from heat and serve immediately. Garnish with sesame seeds and chopped cilantro.
