Ingredients
- 2 packs (3 oz each) instant ramen noodles, discard seasoning packets
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 medium carrot, julienned
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 3 green onions, sliced
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 teaspoon sriracha (optional, for heat)
- Sesame seeds, for garnish
- Chopped fresh cilantro, for garnish
Instructions
- Fill a large pot with water and bring to a boil over medium-high heat. Add the ramen noodles and cook for 2-3 minutes until just softened. Drain and set aside in a colander.
- In the same pot (now empty), heat 2 tablespoons of vegetable oil over medium heat. Add the minced garlic and grated ginger. Stir constantly for about 30 seconds until fragrant.
- Add the julienned carrot, sliced red bell pepper, and broccoli florets to the pot. Stir-fry for 5-7 minutes, or until the vegetables are just tender.
- While the vegetables are cooking, in a small bowl, whisk together the soy sauce, hoisin sauce, sesame oil, honey, and sriracha (if using) to create the stir-fry sauce.
- Add the drained noodles back to the pot with the vegetables. Pour the stir-fry sauce over the noodles and vegetables. Toss everything together using a pair of tongs or a large wooden spoon to ensure the noodles are evenly coated in the sauce.
- Stir in the sliced green onions and continue cooking for an additional 2 minutes to heat through. Taste and adjust seasoning if necessary.
- Remove from heat and serve immediately. Garnish with sesame seeds and chopped cilantro.
