Ingredients
- 1 lb pork tenderloin, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 cup pineapple chunks (fresh or canned)
- 2 tablespoons honey
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine the pork slices with soy sauce and cornstarch. Mix well to ensure pork is coated evenly. Let it marinate while you prepare the other ingredients.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat until it’s shimmering.
- Add the marinated pork to the skillet in a single layer. Cook without stirring for 2-3 minutes until the pork begins to brown.
- Stir the pork and continue cooking for another 2 minutes until the pork is cooked through. Remove the pork from the skillet and set it aside on a plate.
- In the same skillet, add the remaining tablespoon of oil. Add the sliced red bell pepper and cook for 2 minutes until slightly softened.
- Add the pineapple chunks, honey, rice vinegar, minced garlic, and grated ginger to the skillet. Stir well to combine all ingredients and cook for another 2 minutes.
- Return the pork to the skillet, mixing it with the bell pepper and pineapple mixture. Toss everything together to combine all flavors thoroughly.
- Cook for another 2-3 minutes until everything is heated through. Taste and season with salt and pepper as needed.
- Remove the skillet from heat. Sprinkle sliced green onions on top before serving for a fresh burst of flavor.
- Serve the pork and pineapple stir-fry over steamed rice or noodles for a complete meal.
