Ingredients
- 8 ounces pasta (such as penne or fusilli)
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 cup broccoli florets
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta in a colander.
- In a large pan, heat the olive oil over medium-high heat. Add the sliced bell peppers and sauté for about 2 minutes until they start to soften.
- Add the zucchini and broccoli to the pan, and sauté for another 3 minutes, stirring occasionally.
- Add the minced garlic, cherry tomatoes, and Italian seasoning to the pan. Cook for an additional 2-3 minutes, stirring occasionally, until the tomatoes begin to soften.
- Add the cooked pasta to the pan, tossing to combine. If the pasta seems dry, add a splash of reserved pasta water, a little at a time, until desired consistency is reached.
- Season with salt and pepper to taste. Toss everything together until well mixed and heated through.
- Remove from heat and transfer to serving plates. Sprinkle with grated Parmesan cheese and garnish with fresh basil leaves before serving.
