Ingredients

  • 8 ounces pasta (such as penne or fusilli)
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta in a colander.
  2. In a large pan, heat the olive oil over medium-high heat. Add the sliced bell peppers and sauté for about 2 minutes until they start to soften.
  3. Add the zucchini and broccoli to the pan, and sauté for another 3 minutes, stirring occasionally.
  4. Add the minced garlic, cherry tomatoes, and Italian seasoning to the pan. Cook for an additional 2-3 minutes, stirring occasionally, until the tomatoes begin to soften.
  5. Add the cooked pasta to the pan, tossing to combine. If the pasta seems dry, add a splash of reserved pasta water, a little at a time, until desired consistency is reached.
  6. Season with salt and pepper to taste. Toss everything together until well mixed and heated through.
  7. Remove from heat and transfer to serving plates. Sprinkle with grated Parmesan cheese and garnish with fresh basil leaves before serving.
