Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup brown or green lentils, rinsed
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 bay leaves
  • 1 tablespoon apple cider vinegar
  • 1 cup kale, chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat. Once hot, add the sliced sausage and cook until browned, about 5 minutes, stirring occasionally.
  2. Add the chopped onion, minced garlic, diced carrots, and diced celery to the pot. Cook for about 5-7 minutes, until the vegetables begin to soften, stirring frequently.
  3. Stir in the smoked paprika, dried thyme, black pepper, and salt. Cook for another minute to let the spices release their aroma.
  4. Add the rinsed lentils to the pot along with the chicken broth, diced tomatoes, and bay leaves. Stir everything together and bring to a boil.
  5. Once boiling, reduce the heat to low, cover the pot, and let the stew simmer for about 45 minutes, stirring occasionally. The lentils should be tender and the flavors well combined.
  6. Before serving, stir in the apple cider vinegar and chopped kale. Cook for an additional 5 minutes until the kale has wilted. Taste and adjust seasoning if needed.
  7. Remove the bay leaves before serving. Serve the stew hot and garnish with fresh herbs if desired.
