Ingredients
- 4 oz rice noodles
- 2 tbsp vegetable oil
- 1/2 lb shrimp, peeled and deveined
- 2 eggs
- 2 cloves garlic, minced
- 1 cup bean sprouts
- 1/4 cup peanuts, crushed
- 2 green onions, sliced
- 1 lime, cut into wedges
- 2 tbsp fish sauce
- 1 tbsp tamarind paste
- 1 tbsp sugar
- 1 red chili, sliced (optional)
- 1/4 cup cilantro, chopped
Instructions
- Cook the rice noodles according to package instructions, then rinse with cold water and set aside.
- In a small bowl, whisk together fish sauce, tamarind paste, and sugar. Adjust to taste if necessary.
- Heat a large pan or wok over medium-high heat and add 1 tablespoon of vegetable oil. Add the shrimp and cook until pink and cooked through, about 3-4 minutes. Remove and set aside.
- In the same pan, add another tablespoon of oil and crack the eggs. Scramble them lightly until just cooked, then add minced garlic and sauté for about 30 seconds until fragrant.
- Add the cooked noodles and prepared sauce to the pan. Toss everything to combine, making sure the noodles are evenly coated.
- Return the cooked shrimp to the pan, add bean sprouts and green onions, and toss everything together until heated through.
- Serve the Pad Thai garnished with crushed peanuts, cilantro, sliced red chili, and a wedge of lime. Enjoy immediately while hot!
