Ingredients

  • 4 oz rice noodles
  • 2 tbsp vegetable oil
  • 1/2 lb shrimp, peeled and deveined
  • 2 eggs
  • 2 cloves garlic, minced
  • 1 cup bean sprouts
  • 1/4 cup peanuts, crushed
  • 2 green onions, sliced
  • 1 lime, cut into wedges
  • 2 tbsp fish sauce
  • 1 tbsp tamarind paste
  • 1 tbsp sugar
  • 1 red chili, sliced (optional)
  • 1/4 cup cilantro, chopped

Instructions

  1. Cook the rice noodles according to package instructions, then rinse with cold water and set aside.
  2. In a small bowl, whisk together fish sauce, tamarind paste, and sugar. Adjust to taste if necessary.
  3. Heat a large pan or wok over medium-high heat and add 1 tablespoon of vegetable oil. Add the shrimp and cook until pink and cooked through, about 3-4 minutes. Remove and set aside.
  4. In the same pan, add another tablespoon of oil and crack the eggs. Scramble them lightly until just cooked, then add minced garlic and sauté for about 30 seconds until fragrant.
  5. Add the cooked noodles and prepared sauce to the pan. Toss everything to combine, making sure the noodles are evenly coated.
  6. Return the cooked shrimp to the pan, add bean sprouts and green onions, and toss everything together until heated through.
  7. Serve the Pad Thai garnished with crushed peanuts, cilantro, sliced red chili, and a wedge of lime. Enjoy immediately while hot!
