Ingredients
- 8 cannelloni tubes
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 onion, chopped
- 1 cup ricotta cheese
- 2 cups fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh basil, chopped
- 1/2 teaspoon nutmeg
- 2 cups tomato sauce
- 1 cup mozzarella cheese, shredded
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the cannelloni tubes as per the package instructions until they are al dente. Drain and set aside. Tip: Run cold water over them to stop further cooking.
- Heat olive oil in a large pan over medium heat. Add the minced garlic and chopped onion. Sauté until the onion becomes translucent, about 3 minutes.
- Add the chopped spinach to the pan and sauté until it is wilted, about 2-3 minutes.
- In a large bowl, combine the ricotta cheese, sautéed spinach and onion mixture, Parmesan cheese, basil, nutmeg, salt, and pepper. Mix well until all ingredients are combined.
- Using a small spoon or piping bag, carefully stuff each cannelloni tube with the ricotta and spinach mixture. Place them in a single layer in a baking dish.
- Pour the tomato sauce evenly over the stuffed cannelloni. Ensure they are fully covered with sauce to prevent drying out during baking.
- Sprinkle the shredded mozzarella cheese over the top of the cannelloni.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for a few minutes before serving. This ensures the filling sets slightly for easier serving.
