Ingredients

  • 8 cannelloni tubes
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 onion, chopped
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh basil, chopped
  • 1/2 teaspoon nutmeg
  • 2 cups tomato sauce
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the cannelloni tubes as per the package instructions until they are al dente. Drain and set aside. Tip: Run cold water over them to stop further cooking.
  3. Heat olive oil in a large pan over medium heat. Add the minced garlic and chopped onion. Sauté until the onion becomes translucent, about 3 minutes.
  4. Add the chopped spinach to the pan and sauté until it is wilted, about 2-3 minutes.
  5. In a large bowl, combine the ricotta cheese, sautéed spinach and onion mixture, Parmesan cheese, basil, nutmeg, salt, and pepper. Mix well until all ingredients are combined.
  6. Using a small spoon or piping bag, carefully stuff each cannelloni tube with the ricotta and spinach mixture. Place them in a single layer in a baking dish.
  7. Pour the tomato sauce evenly over the stuffed cannelloni. Ensure they are fully covered with sauce to prevent drying out during baking.
  8. Sprinkle the shredded mozzarella cheese over the top of the cannelloni.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  10. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
  11. Remove from the oven and let it cool for a few minutes before serving. This ensures the filling sets slightly for easier serving.
