Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet (1 ounce) taco seasoning
- 2 cups low-sodium chicken broth
- 1 cup salsa
- 8 ounces rotini pasta, uncooked
- 1 cup canned corn, drained
- 1 cup shredded cheddar cheese
- Salt, to taste
- Pepper, to taste
- Chopped fresh cilantro for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Use a wooden spoon to break up the meat as it cooks.
- Add the diced onion and minced garlic to the pot. Cook for another 2-3 minutes until the onion becomes translucent.
- Stir in the taco seasoning until the beef and onions are well coated.
- Pour in the chicken broth and salsa. Stir to combine.
- Add the uncooked pasta and bring the mixture to a boil, then reduce to a simmer. Cook, uncovered, for about 12-15 minutes or until the pasta is tender and the liquid is mostly absorbed, stirring occasionally.
- Stir in the corn and let it heat through for about 1-2 minutes. Add salt and pepper to taste.
- Turn off the heat and sprinkle the cheddar cheese over the top. Cover the pot with a lid for 2-3 minutes to allow cheese to melt.
- Serve hot, topped with chopped cilantro if desired. Enjoy your easy, flavorful meal!
