Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet (1 ounce) taco seasoning
  • 2 cups low-sodium chicken broth
  • 1 cup salsa
  • 8 ounces rotini pasta, uncooked
  • 1 cup canned corn, drained
  • 1 cup shredded cheddar cheese
  • Salt, to taste
  • Pepper, to taste
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Use a wooden spoon to break up the meat as it cooks.
  2. Add the diced onion and minced garlic to the pot. Cook for another 2-3 minutes until the onion becomes translucent.
  3. Stir in the taco seasoning until the beef and onions are well coated.
  4. Pour in the chicken broth and salsa. Stir to combine.
  5. Add the uncooked pasta and bring the mixture to a boil, then reduce to a simmer. Cook, uncovered, for about 12-15 minutes or until the pasta is tender and the liquid is mostly absorbed, stirring occasionally.
  6. Stir in the corn and let it heat through for about 1-2 minutes. Add salt and pepper to taste.
  7. Turn off the heat and sprinkle the cheddar cheese over the top. Cover the pot with a lid for 2-3 minutes to allow cheese to melt.
