Ingredients
- 2 tablespoons unsalted butter
- 3 medium leeks, white and light green parts only, sliced
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- 1 cup water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 2 tablespoons chopped fresh chives (optional, for garnish)
Instructions
- Melt the butter in a large pot over medium heat.
- Add the sliced leeks to the pot. Cook, stirring occasionally, until they are soft, about 5-7 minutes.
- Stir in the minced garlic and cook for 1 more minute, until fragrant.
- Add the diced potatoes, broth, and water to the pot. Bring to a boil, then reduce the heat to low.
- Cover the pot and simmer for 25-30 minutes, or until the potatoes are tender.
- Remove the pot from heat. Using an immersion blender, carefully puree the soup until smooth.
- Stir in the heavy cream, salt, and black pepper. Return the pot to low heat and gently heat through.
