  • 2 tablespoons unsalted butter
  • 3 medium leeks, white and light green parts only, sliced
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 2 tablespoons chopped fresh chives (optional, for garnish)

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the sliced leeks to the pot. Cook, stirring occasionally, until they are soft, about 5-7 minutes.
  3. Stir in the minced garlic and cook for 1 more minute, until fragrant.
  4. Add the diced potatoes, broth, and water to the pot. Bring to a boil, then reduce the heat to low.
  5. Cover the pot and simmer for 25-30 minutes, or until the potatoes are tender.
  6. Remove the pot from heat. Using an immersion blender, carefully puree the soup until smooth.
  7. Stir in the heavy cream, salt, and black pepper. Return the pot to low heat and gently heat through.
  8. Serve hot, garnished with fresh chives if desired.
