Ingredients
- 2 medium eggplants, diced
- 2 medium zucchinis, sliced
- 2 red bell peppers, chopped
- 1 large onion, diced
- 4 garlic cloves, minced
- 4 medium tomatoes, diced
- 1/4 cup olive oil
- Salt to taste
- Freshly ground black pepper to taste
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced eggplant, cooking until it softens and turns golden brown, about 10 minutes. Remove and set aside.
- In the same skillet, add another tablespoon of olive oil, then toss in the zucchini slices. Sauté until they are lightly browned, around 5 to 7 minutes. Remove from skillet and set aside with the eggplant.
- Repeat the process with the bell peppers, using another tablespoon of olive oil, and cook until they are tender, approximately 8 minutes. Set aside with the other vegetables.
- Add the remaining olive oil to the skillet, followed by the onions. Sauté for 5 minutes until they begin to soften. Add the minced garlic, cooking for an additional 2 minutes until fragrant.
- Stir in the tomatoes with their juices. Season with salt, pepper, thyme, basil, and oregano. Let the mixture simmer for 10 to 15 minutes, allowing it to thicken slightly.
- Combine all the cooked vegetables in an oven-safe baking dish. Pour the tomato-onion mixture over the top, mixing gently to combine all flavors.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 20 to 25 minutes, until the vegetables are tender and fully cooked.
- Garnish with chopped fresh parsley before serving. Enjoy your homemade ratatouille as a delectable main or side dish!
