Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sliced sausage to the pot and cook for about 5 minutes, or until browned. Stir occasionally.
  3. Remove the sausage from the pot and set it aside on a plate.
  4. In the same pot, add the chopped onion, minced garlic, sliced carrots, and sliced celery. Cook for about 5 minutes, or until the vegetables begin to soften.
  5. Return the sausage to the pot. Stir in the white beans, diced tomatoes, and chicken broth. Add the dried thyme and rosemary.
  6. Bring the stew to a boil, then reduce the heat to low. Let it simmer uncovered for about 30 minutes. Stir occasionally to prevent sticking or burning.
  7. Season the stew with salt and pepper to taste. For added flavor, consider using freshly ground black pepper.
  8. Stir in the fresh parsley just before serving. This will add a burst of fresh flavor and vibrant color to the stew.
  9. Optional: If you prefer a thicker stew, use a potato masher to mash some of the beans against the side of the pot.
