Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cans (15 ounces each) white beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the sliced sausage to the pot and cook for about 5 minutes, or until browned. Stir occasionally.
- Remove the sausage from the pot and set it aside on a plate.
- In the same pot, add the chopped onion, minced garlic, sliced carrots, and sliced celery. Cook for about 5 minutes, or until the vegetables begin to soften.
- Return the sausage to the pot. Stir in the white beans, diced tomatoes, and chicken broth. Add the dried thyme and rosemary.
- Bring the stew to a boil, then reduce the heat to low. Let it simmer uncovered for about 30 minutes. Stir occasionally to prevent sticking or burning.
- Season the stew with salt and pepper to taste. For added flavor, consider using freshly ground black pepper.
- Stir in the fresh parsley just before serving. This will add a burst of fresh flavor and vibrant color to the stew.
- Optional: If you prefer a thicker stew, use a potato masher to mash some of the beans against the side of the pot.
