  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups seafood stock or chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • 1 pound peeled and deveined shrimp
  • 1 pound crab meat
  • 1 pound white fish fillets, cut into chunks
  • 2 cups sliced okra
  • 3 green onions, chopped
  • 1/4 cup chopped fresh parsley
  • 2 teaspoons filé powder (optional)
  • Cooked white rice for serving

Instructions

  1. Gather all your ingredients and kitchen tools. You’ll need a large heavy-bottomed pot or Dutch oven, a wooden spoon, and a knife for chopping. These are essential for making a smooth and flavorful gumbo.
  2. Heat the vegetable oil in the pot over medium heat. Sprinkle in the flour slowly, stirring constantly with a wooden spoon. Cook for about 15 minutes until the roux turns a dark brown but be careful not to burn it. Patience is key!
  3. Add in the chopped onion, green bell pepper, and celery (the ‘holy trinity’ of Cajun cooking). Stir well and cook for about 8-10 minutes until the vegetables are softened.
  4. Stir in the minced garlic and cook for another minute until fragrant. Tip: Garlic burns easily, so keep stirring!
  5. Pour in the diced tomatoes with their juice and the seafood stock. Mix everything until well combined.
  6. Season the gumbo with Cajun seasoning, dried thyme, cayenne pepper, salt, and black pepper. Bring the mixture to a simmer and let it cook uncovered for 45 minutes.
  7. Add the shrimp, crab meat, and fish chunks to the pot. Stir gently to avoid breaking the fish. Cook for another 15 minutes until the seafood is cooked through.
  8. Stir in the sliced okra, green onions, and parsley. Cook for about 5 more minutes, then turn off the heat.
  9. If using, stir in the filé powder to thicken the gumbo slightly. This adds a unique flavor too.
