- 1/2 cup all-purpose flour
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups seafood stock or chicken broth
- 1 tablespoon Cajun seasoning
- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper
- Salt and black pepper to taste
- 1 pound peeled and deveined shrimp
- 1 pound crab meat
- 1 pound white fish fillets, cut into chunks
- 2 cups sliced okra
- 3 green onions, chopped
- 1/4 cup chopped fresh parsley
- 2 teaspoons filé powder (optional)

Instructions
- Gather all your ingredients and kitchen tools. You’ll need a large heavy-bottomed pot or Dutch oven, a wooden spoon, and a knife for chopping. These are essential for making a smooth and flavorful gumbo.
- Heat the vegetable oil in the pot over medium heat. Sprinkle in the flour slowly, stirring constantly with a wooden spoon. Cook for about 15 minutes until the roux turns a dark brown but be careful not to burn it. Patience is key!
- Add in the chopped onion, green bell pepper, and celery (the ‘holy trinity’ of Cajun cooking). Stir well and cook for about 8-10 minutes until the vegetables are softened.
- Stir in the minced garlic and cook for another minute until fragrant. Tip: Garlic burns easily, so keep stirring!
- Pour in the diced tomatoes with their juice and the seafood stock. Mix everything until well combined.
- Season the gumbo with Cajun seasoning, dried thyme, cayenne pepper, salt, and black pepper. Bring the mixture to a simmer and let it cook uncovered for 45 minutes.
- Add the shrimp, crab meat, and fish chunks to the pot. Stir gently to avoid breaking the fish. Cook for another 15 minutes until the seafood is cooked through.
- Stir in the sliced okra, green onions, and parsley. Cook for about 5 more minutes, then turn off the heat.
- If using, stir in the filé powder to thicken the gumbo slightly. This adds a unique flavor too.
