- 8 oz (225g) penne pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup (240ml) heavy cream
- 1 cup (100g) grated Parmesan cheese
- 1 cup (140g) canned artichoke hearts, drained and chopped
- 2 cups (60g) fresh spinach, chopped
- Salt and pepper to taste
- 1 teaspoon red pepper flakes (optional)
- 1 tablespoon lemon juice
- 1/4 cup (25g) breadcrumbs
Instructions
- Start by boiling a large pot of salted water. Add the penne pasta to the boiling water and cook according to the package instructions, usually about 10-12 minutes, until al dente. Once cooked, drain the pasta and set aside.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until just fragrant, but do not let it brown.
