Ingredients

  • 8 oz (225g) penne pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • 1 cup (100g) grated Parmesan cheese
  • 1 cup (140g) canned artichoke hearts, drained and chopped
  • 2 cups (60g) fresh spinach, chopped
  • Salt and pepper to taste
  • 1 teaspoon red pepper flakes (optional)
  • 1 tablespoon lemon juice
  • 1/4 cup (25g) breadcrumbs

Instructions

  1. Start by boiling a large pot of salted water. Add the penne pasta to the boiling water and cook according to the package instructions, usually about 10-12 minutes, until al dente. Once cooked, drain the pasta and set aside.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until just fragrant, but do not let it brown.
