Ingredients

  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup water
  • 2 tablespoons fresh cilantro, chopped (optional)

Instructions

  1. Peel and dice the sweet potatoes into small, bite-sized cubes. Dice the red bell pepper and onion. Mince the garlic cloves.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Tip: Make sure the skillet is large enough to hold all ingredients comfortably without overflowing.
  3. Add the ground turkey to the heated skillet. Cook and stir occasionally for about 5-7 minutes until it is browned and fully cooked. Use a spatula or wooden spoon to break it into small pieces. Once cooked, remove the turkey from the skillet and set aside.
  4. In the same skillet, add the diced onion and bell pepper. Saute for about 3-4 minutes until they begin to soften. Then, add the minced garlic and cook for an additional 30 seconds, stirring to prevent burning.
  5. Add the diced sweet potatoes, ground cumin, smoked paprika, salt, and pepper to the skillet. Stir well to combine all ingredients.
  6. Pour in 1/4 cup of water and cover the skillet with a lid. Lower the heat to medium and cook for about 10-12 minutes, or until the sweet potatoes are tender.
