- 1 pound ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup water
- 2 tablespoons fresh cilantro, chopped (optional)

Instructions
- Peel and dice the sweet potatoes into small, bite-sized cubes. Dice the red bell pepper and onion. Mince the garlic cloves.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Tip: Make sure the skillet is large enough to hold all ingredients comfortably without overflowing.
- Add the ground turkey to the heated skillet. Cook and stir occasionally for about 5-7 minutes until it is browned and fully cooked. Use a spatula or wooden spoon to break it into small pieces. Once cooked, remove the turkey from the skillet and set aside.
- In the same skillet, add the diced onion and bell pepper. Saute for about 3-4 minutes until they begin to soften. Then, add the minced garlic and cook for an additional 30 seconds, stirring to prevent burning.
- Add the diced sweet potatoes, ground cumin, smoked paprika, salt, and pepper to the skillet. Stir well to combine all ingredients.
- Pour in 1/4 cup of water and cover the skillet with a lid. Lower the heat to medium and cook for about 10-12 minutes, or until the sweet potatoes are tender. Stir occasionally to prevent sticking. Tip: Pierce the sweet potatoes with a fork to check for doneness; they should be easy to pierce but not mushy.
- Return the cooked ground turkey to the skillet and stir well to combine with the vegetables. Cook for an additional 2-3 minutes to ensure everything is heated through.
