Ingredients
- 2 pounds ground beef
- 1 cup breadcrumbs
- 1/2 cup milk
- 1/2 cup BBQ sauce, plus 1/4 cup for glaze
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 10 slices of bacon
Instructions
- In a large mixing bowl, combine ground beef, breadcrumbs, milk, 1/2 cup BBQ sauce, egg, garlic powder, onion powder, salt, and pepper. Mix gently with your hands or a spoon until just combined. Avoid overmixing to keep the meatloaf tender.
- On a clean cutting board, lay out a piece of aluminum foil. Form the meatloaf mixture into a loaf shape on the foil.
- Wrap the meatloaf with bacon slices, tucking the ends underneath. This helps keep the bacon in place during cooking.
- Pour 1 cup of water into the Instant Pot. Place the trivet in the bottom, then carefully place the bacon-wrapped meatloaf on the trivet.
- Secure the lid and set the Instant Pot to manual high pressure for 30 minutes. Once cooking is complete, allow a natural pressure release for 10 minutes before quick releasing any remaining pressure.
- Carefully remove the meatloaf from the Instant Pot using the foil to lift it out. Preheat your oven broiler to high.
- Brush the top of the meatloaf with the remaining BBQ sauce and place it under the broiler for 3-5 minutes, or until the bacon is crispy.
- Let the meatloaf rest for 5 minutes before slicing. This makes it easier to slice and helps retain its juices.
