Ingredients

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup BBQ sauce, plus 1/4 cup for glaze
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 10 slices of bacon

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, milk, 1/2 cup BBQ sauce, egg, garlic powder, onion powder, salt, and pepper. Mix gently with your hands or a spoon until just combined. Avoid overmixing to keep the meatloaf tender.
  2. On a clean cutting board, lay out a piece of aluminum foil. Form the meatloaf mixture into a loaf shape on the foil.
  3. Wrap the meatloaf with bacon slices, tucking the ends underneath. This helps keep the bacon in place during cooking.
  4. Pour 1 cup of water into the Instant Pot. Place the trivet in the bottom, then carefully place the bacon-wrapped meatloaf on the trivet.
  5. Secure the lid and set the Instant Pot to manual high pressure for 30 minutes. Once cooking is complete, allow a natural pressure release for 10 minutes before quick releasing any remaining pressure.
  6. Carefully remove the meatloaf from the Instant Pot using the foil to lift it out. Preheat your oven broiler to high.
  7. Brush the top of the meatloaf with the remaining BBQ sauce and place it under the broiler for 3-5 minutes, or until the bacon is crispy.
  8. Let the meatloaf rest for 5 minutes before slicing. This makes it easier to slice and helps retain its juices.
