Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon vegetable oil
  • 1 cup barbecue sauce
  • 1/2 cup beef broth
  • 1 tablespoon liquid smoke
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 slider buns
  • 1/2 cup coleslaw (optional, for serving)

Instructions

  1. Gather all your ingredients and equipment. Having everything ready makes the process smoother and enjoyable.
  2. Set your Instant Pot to ‘Sauté’ mode and wait until the display shows ‘HOT’.
  3. Add the vegetable oil to the pot, ensuring it’s spread evenly on the bottom.
  4. Season the beef chuck roast with salt and black pepper on all sides for flavor.
  5. Place the beef chuck roast into the Instant Pot. Sear it for 3-4 minutes on each side. This adds color and locks in juices. Use tongs to carefully flip the meat.
  6. Once seared, switch the Instant Pot off of ‘Sauté’ mode.
  7. In a mixing bowl, combine the barbecue sauce, beef broth, liquid smoke, garlic powder, onion powder, and smoked paprika. Mix well.
  8. Pour the sauce mixture over the seared beef in the Instant Pot.
  9. Secure the lid on the Instant Pot, ensuring the valve is set to ‘Sealing’.
  10. Select the ‘Pressure Cook’ or ‘Manual’ mode on the Instant Pot and set the timer for 60 minutes.
  11. Allow the pressure to release naturally for about 15 minutes after cooking. Then, carefully turn the valve to ‘Venting’ to release any remaining pressure.
  12. Once the pressure has been fully released, open the lid and carefully remove the beef. It will be hot, so use tongs.
  13. Use two forks to shred the beef into pieces. It should be tender and pull apart easily. If not, return it to the pot and cook for an additional 15 minutes.
  14. Return the shredded beef to the Instant Pot and stir it well into the sauce.
  15. Toast the slider buns lightly if you like a bit of crunch. It’s optional but adds a nice texture.
  16. Assemble the sliders by placing a portion of the BBQ beef onto each slider bun. Add a spoonful of coleslaw if desired for added crunch.
  17. Serve the sliders warm and enjoy! Leftovers can be stored in an airtight container in the fridge for up to 3 days.
