Ingredients

  • 1 pound (450g) ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet (1.25oz) taco seasoning
  • 2 cups (480ml) chicken broth
  • 1 cup (240ml) salsa
  • 2 cups (200g) uncooked pasta (e.g., elbow or penne)
  • 1 cup (100g) shredded cheddar cheese
  • 1/2 cup (120ml) heavy cream
  • Fresh cilantro or green onions for garnish

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Add ground beef, onion, and garlic. Cook until the beef is browned and the onion is softened.
  2. Add taco seasoning, chicken broth, salsa, and pasta. Stir to combine.
  3. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 5 minutes.
  4. Once the cooking cycle is complete, perform a quick release of the pressure.
  5. Stir in cheddar cheese and heavy cream until melted and combined.
  6. Serve hot, garnished with fresh cilantro or green onions.
