Ingredients

  • 1.5 pounds beef stew meat, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon cayenne pepper (optional)
  • 2 cups beef broth
  • 1 can (14 ounces) coconut milk
  • 3 large potatoes, peeled and cut into 1-inch cubes
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium-high heat.
  2. Add the beef cubes to the pot. Brown the beef on all sides, which should take about 5-7 minutes. Use a wooden spoon to occasionally turn the beef. Tip: Browning adds depth of flavor to the dish.
  3. Once the beef is browned, remove it from the pot using a slotted spoon and set aside.
  4. In the same pot, add the chopped onions and sauté until golden brown, approximately 5 minutes.
  5. Stir in the minced garlic and ginger, and cook for another 1-2 minutes, until fragrant.
  6. Add the curry powder, cumin, coriander, turmeric, and cayenne pepper to the onions and stir well to combine. Cook for an additional 1-2 minutes to toast the spices.
  7. Pour in the beef broth and coconut milk, stirring to combine the spices with the liquids.
  8. Return the browned beef to the pot. Add the potato cubes and stir everything together. Ensure the beef and potatoes are covered by the liquid. Season with salt and pepper to taste.
  9. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for approximately 1 hour and 15 minutes, or until the beef and potatoes are tender. Tip: Stir occasionally to prevent sticking.
  10. Once the beef and potatoes are tender, taste and adjust seasoning if necessary.
