- 1 green bell pepper, chopped
- 1 large onion, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 1 pound smoked sausage, sliced
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 bay leaf
- 4 cups chicken broth
- 1 cup frozen okra
- 2 cups cooked white rice
- 2 green onions, chopped (optional, for garnish)
Instructions
- Heat the vegetable oil in a large, heavy pot over medium heat. Once hot, gradually whisk in the flour, stirring constantly to make a roux. Continue stirring until the roux reaches a deep brown color, approximately 10-15 minutes. Be patient and keep stirring to avoid burning.
- Add the chopped bell pepper, onion, and celery to the roux. Cook for 5 minutes, stirring frequently, until the vegetables are softened. Stir in the minced garlic and cook for another minute.
- Stir in the smoked sausage and chicken pieces, then season with salt, black pepper, cayenne pepper, thyme, and paprika. Add the bay leaf. Cook for 5 minutes, allowing the flavors to blend.
- Gradually stir in the chicken broth, ensuring that the roux is well incorporated. Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 1 hour, stirring occasionally. This allows the flavors to meld and deepen.
- Add the frozen okra and continue to simmer for an additional 30 minutes. Taste and adjust seasoning as needed.
