  • 1/4 cup all-purpose flour
  • 1 green bell pepper, chopped
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 pound smoked sausage, sliced
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 bay leaf
  • 4 cups chicken broth
  • 1 cup frozen okra
  • 2 cups cooked white rice
  • 2 green onions, chopped (optional, for garnish)

Instructions

  1. Heat the vegetable oil in a large, heavy pot over medium heat. Once hot, gradually whisk in the flour, stirring constantly to make a roux. Continue stirring until the roux reaches a deep brown color, approximately 10-15 minutes. Be patient and keep stirring to avoid burning.
  2. Add the chopped bell pepper, onion, and celery to the roux. Cook for 5 minutes, stirring frequently, until the vegetables are softened. Stir in the minced garlic and cook for another minute.
  3. Stir in the smoked sausage and chicken pieces, then season with salt, black pepper, cayenne pepper, thyme, and paprika. Add the bay leaf. Cook for 5 minutes, allowing the flavors to blend.
  4. Gradually stir in the chicken broth, ensuring that the roux is well incorporated. Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 1 hour, stirring occasionally. This allows the flavors to meld and deepen.
