Ingredients
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cut into tenders
- 1 cup barbecue sauce
- 1/4 cup chicken broth
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Turn your Instant Pot on and select the ‘Sauté’ function. Add the olive oil and let it heat up slightly.
- Add the chopped onion to the pot and cook for about 2-3 minutes until it becomes translucent. Stir occasionally to prevent burning.
- Add the minced garlic to the pot and cook for an additional minute, stirring frequently until fragrant.
- Cancel the ‘Sauté’ function. Place the chicken tenders in the Instant Pot on top of the onion and garlic mixture.
- In a mixing bowl, combine the barbecue sauce, chicken broth, smoked paprika, salt, and pepper. Stir well to combine.
- Pour the barbecue sauce mixture over the chicken tenders, ensuring they are well-coated. Use tongs to flip the tenders if needed.
- Secure the Instant Pot lid. Set the pressure valve to ‘Sealing’. Select ‘Manual’ or ‘Pressure Cook’ and set the timer for 10 minutes on high pressure.
- Once the cooking time is up, allow the pressure to release naturally for 5 minutes. Then carefully turn the pressure valve to ‘Venting’ to release any remaining pressure.
- Open the lid and use two forks to shred the chicken inside the Instant Pot. Stir well so the chicken is coated in the sauce.
- Serve the BBQ chicken warm. It goes great in sandwiches, tacos, or served over rice.
