Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, cut into tenders
  • 1 cup barbecue sauce
  • 1/4 cup chicken broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Turn your Instant Pot on and select the ‘Sauté’ function. Add the olive oil and let it heat up slightly.
  2. Add the chopped onion to the pot and cook for about 2-3 minutes until it becomes translucent. Stir occasionally to prevent burning.
  3. Add the minced garlic to the pot and cook for an additional minute, stirring frequently until fragrant.
  4. Cancel the ‘Sauté’ function. Place the chicken tenders in the Instant Pot on top of the onion and garlic mixture.
  5. In a mixing bowl, combine the barbecue sauce, chicken broth, smoked paprika, salt, and pepper. Stir well to combine.
  6. Pour the barbecue sauce mixture over the chicken tenders, ensuring they are well-coated. Use tongs to flip the tenders if needed.
  7. Secure the Instant Pot lid. Set the pressure valve to ‘Sealing’. Select ‘Manual’ or ‘Pressure Cook’ and set the timer for 10 minutes on high pressure.
  8. Once the cooking time is up, allow the pressure to release naturally for 5 minutes. Then carefully turn the pressure valve to ‘Venting’ to release any remaining pressure.
  9. Open the lid and use two forks to shred the chicken inside the Instant Pot. Stir well so the chicken is coated in the sauce.
  10. Serve the BBQ chicken warm. It goes great in sandwiches, tacos, or served over rice.
