Ingredients
- 1 pound (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/2 cup (120ml) soy sauce
- 2 tablespoons (30ml) hoisin sauce
- 2 tablespoons (30ml) honey
- 2 cloves garlic, minced
- 1 teaspoon (5ml) grated ginger
- 1/2 cup (120ml) chicken broth
- 1/2 cup (75g) cashews
- 2 green onions, sliced (for garnish)
- Cooked rice (for serving)
Instructions
- Set the Instant Pot to the ‘Sauté’ function. Add the chicken pieces and cook until lightly browned, about 3-4 minutes.
- Add the soy sauce, hoisin sauce, honey, garlic, ginger, and chicken broth. Stir to combine.
- Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 5 minutes.
- Once the cooking cycle is complete, perform a quick release of the pressure.
- Open the lid and stir in the cashews. Set the Instant Pot to ‘Sauté’ mode and cook for 2-3 minutes to thicken the sauce.
- Serve hot over cooked rice, garnished with sliced green onions.
