Ingredients

  • 1 pound (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup (120ml) soy sauce
  • 2 tablespoons (30ml) hoisin sauce
  • 2 tablespoons (30ml) honey
  • 2 cloves garlic, minced
  • 1 teaspoon (5ml) grated ginger
  • 1/2 cup (120ml) chicken broth
  • 1/2 cup (75g) cashews
  • 2 green onions, sliced (for garnish)
  • Cooked rice (for serving)

Instructions

  1. Set the Instant Pot to the ‘Sauté’ function. Add the chicken pieces and cook until lightly browned, about 3-4 minutes.
  2. Add the soy sauce, hoisin sauce, honey, garlic, ginger, and chicken broth. Stir to combine.
  3. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 5 minutes.
  4. Once the cooking cycle is complete, perform a quick release of the pressure.
  5. Open the lid and stir in the cashews. Set the Instant Pot to ‘Sauté’ mode and cook for 2-3 minutes to thicken the sauce.
  6. Serve hot over cooked rice, garnished with sliced green onions.
