Ingredients
- 2 pounds (900g) chicken thighs or drumsticks
- 1/2 cup (120ml) soy sauce
- 1/2 cup (120ml) white vinegar
- 4 cloves garlic, minced
- 3 bay leaves
- 1 teaspoon (2g) black peppercorns
- 1 tablespoon (15ml) vegetable oil
- 1/2 cup (120ml) water
- Cooked rice (for serving)
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add vegetable oil and brown the chicken pieces on both sides, about 3-4 minutes per side.
- Add soy sauce, vinegar, garlic, bay leaves, peppercorns, and water. Stir to combine.
- Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 10 minutes.
- Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release.
- Remove the chicken and set aside. Set the Instant Pot to ‘Sauté’ mode and simmer the sauce for 5 minutes to thicken.
- Serve the chicken hot with the sauce over cooked rice.
- Tip: Add a splash of coconut milk for a richer sauce.
