Ingredients

  • 2 pounds (900g) chicken thighs or drumsticks
  • 1/2 cup (120ml) soy sauce
  • 1/2 cup (120ml) white vinegar
  • 4 cloves garlic, minced
  • 3 bay leaves
  • 1 teaspoon (2g) black peppercorns
  • 1 tablespoon (15ml) vegetable oil
  • 1/2 cup (120ml) water
  • Cooked rice (for serving)

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Add vegetable oil and brown the chicken pieces on both sides, about 3-4 minutes per side.
  2. Add soy sauce, vinegar, garlic, bay leaves, peppercorns, and water. Stir to combine.
  3. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 10 minutes.
  4. Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release.
  5. Remove the chicken and set aside. Set the Instant Pot to ‘Sauté’ mode and simmer the sauce for 5 minutes to thicken.
  6. Serve the chicken hot with the sauce over cooked rice.
  7. Tip: Add a splash of coconut milk for a richer sauce.
