Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 can (14oz) diced tomatoes
- 1/2 cup (120ml) chicken broth
- 1 teaspoon (5ml) dried oregano
- 1 teaspoon (5ml) dried basil
- 2 tablespoons (30ml) olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
- Cooked pasta or rice (for serving)
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add olive oil and brown the chicken thighs on both sides, about 3-4 minutes per side. Remove and set aside.
- Add onion, garlic, and bell peppers to the Instant Pot. Sauté for 3-4 minutes until softened.
- Add diced tomatoes, chicken broth, oregano, basil, salt, and pepper. Stir to combine.
- Place the chicken thighs on top of the vegetable mixture.
- Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 15 minutes.
- Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release.
- Serve hot over cooked pasta or rice, garnished with fresh parsley.
- Tip: Add a splash of red wine for extra depth of flavor.
