Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 can (14oz) diced tomatoes
  • 1/2 cup (120ml) chicken broth
  • 1 teaspoon (5ml) dried oregano
  • 1 teaspoon (5ml) dried basil
  • 2 tablespoons (30ml) olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Cooked pasta or rice (for serving)

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Add olive oil and brown the chicken thighs on both sides, about 3-4 minutes per side. Remove and set aside.
  2. Add onion, garlic, and bell peppers to the Instant Pot. Sauté for 3-4 minutes until softened.
  3. Add diced tomatoes, chicken broth, oregano, basil, salt, and pepper. Stir to combine.
  4. Place the chicken thighs on top of the vegetable mixture.
  5. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 15 minutes.
  6. Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release.
  7. Serve hot over cooked pasta or rice, garnished with fresh parsley.
  8. Tip: Add a splash of red wine for extra depth of flavor.
