Ingredients

  • 1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup (150g) diced ham
  • 1 cup (100g) shredded Swiss cheese
  • 1 cup (240ml) chicken broth
  • 1 cup (240ml) heavy cream
  • 1 teaspoon (5ml) Dijon mustard
  • 1 teaspoon (5ml) garlic powder
  • 1 cup (100g) breadcrumbs
  • 2 tablespoons (30g) unsalted butter, melted
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Add chicken, ham, chicken broth, heavy cream, Dijon mustard, garlic powder, salt, and pepper to the Instant Pot. Stir to combine.
  2. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 10 minutes.
  3. Once the cooking cycle is complete, perform a quick release of the pressure.
  4. Stir in Swiss cheese until melted and combined.
  5. In a small bowl, mix breadcrumbs and melted butter. Sprinkle the mixture over the casserole.
  6. Set the Instant Pot to ‘Sauté’ mode and cook for 2-3 minutes until the breadcrumbs are golden brown.
  7. Serve hot, garnished with fresh parsley.
