Ingredients

  • 1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup (200g) long-grain white rice
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup (240ml) chicken broth
  • 1 packet (1.25oz) fajita seasoning
  • 2 tablespoons (30ml) olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Add olive oil, chicken, and fajita seasoning. Cook until the chicken is lightly browned, about 5 minutes.
  2. Add bell peppers, onion, garlic, rice, and chicken broth. Stir to combine.
  3. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 10 minutes.
  4. Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release.
  5. Fluff the rice with a fork and serve hot, garnished with fresh cilantro and lime wedges.
  6. Tip: Add a dollop of sour cream or guacamole for extra flavor.
