Ingredients
- 1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup (200g) long-grain white rice
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 cup (240ml) chicken broth
- 1 packet (1.25oz) fajita seasoning
- 2 tablespoons (30ml) olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add olive oil, chicken, and fajita seasoning. Cook until the chicken is lightly browned, about 5 minutes.
- Add bell peppers, onion, garlic, rice, and chicken broth. Stir to combine.
- Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 10 minutes.
- Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release.
- Fluff the rice with a fork and serve hot, garnished with fresh cilantro and lime wedges.
- Tip: Add a dollop of sour cream or guacamole for extra flavor.
