Ingredients

  • 1 pound (450g) boneless, skinless chicken breasts, sliced into strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 packet (1.25oz) fajita seasoning
  • 1/2 cup (120ml) chicken broth
  • 2 tablespoons (30ml) olive oil
  • Salt and pepper to taste
  • Flour tortillas (for serving)
  • Toppings: sour cream, guacamole, salsa, shredded cheese

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Add olive oil, chicken, and fajita seasoning. Cook until the chicken is lightly browned, about 5 minutes.
  2. Add bell peppers, onion, garlic, and chicken broth. Stir to combine.
  3. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 5 minutes.
  4. Once the cooking cycle is complete, perform a quick release of the pressure.
  5. Serve hot with flour tortillas and your favorite toppings.
