Ingredients
- 1 pound (450g) boneless, skinless chicken breasts, sliced into strips
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 packet (1.25oz) fajita seasoning
- 1/2 cup (120ml) chicken broth
- 2 tablespoons (30ml) olive oil
- Salt and pepper to taste
- Flour tortillas (for serving)
- Toppings: sour cream, guacamole, salsa, shredded cheese
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add olive oil, chicken, and fajita seasoning. Cook until the chicken is lightly browned, about 5 minutes.
- Add bell peppers, onion, garlic, and chicken broth. Stir to combine.
- Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 5 minutes.
- Once the cooking cycle is complete, perform a quick release of the pressure.
- Serve hot with flour tortillas and your favorite toppings.
