Ingredients

  • 1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 package (16oz) potato gnocchi
  • 4 cups (960ml) chicken broth
  • 1 cup (240ml) heavy cream
  • 2 cups (60g) fresh spinach
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon (5ml) dried thyme
  • 2 tablespoons (30ml) olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Add olive oil, chicken, onion, and garlic. Cook until the chicken is lightly browned, about 5 minutes.
  2. Add chicken broth, thyme, salt, and pepper. Stir to combine.
  3. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 5 minutes.
  4. Once the cooking cycle is complete, perform a quick release of the pressure.
  5. Add gnocchi, heavy cream, and spinach. Stir to combine and let sit for 2-3 minutes until the spinach wilts.
  6. Serve hot, garnished with fresh parsley.
  7. Tip: Add a sprinkle of Parmesan cheese for extra flavor.
