Ingredients
- 1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 package (16oz) potato gnocchi
- 4 cups (960ml) chicken broth
- 1 cup (240ml) heavy cream
- 2 cups (60g) fresh spinach
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon (5ml) dried thyme
- 2 tablespoons (30ml) olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add olive oil, chicken, onion, and garlic. Cook until the chicken is lightly browned, about 5 minutes.
- Add chicken broth, thyme, salt, and pepper. Stir to combine.
- Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 5 minutes.
- Once the cooking cycle is complete, perform a quick release of the pressure.
- Add gnocchi, heavy cream, and spinach. Stir to combine and let sit for 2-3 minutes until the spinach wilts.
- Serve hot, garnished with fresh parsley.
- Tip: Add a sprinkle of Parmesan cheese for extra flavor.
