Ingredients
- 1 pound (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 pound (450g) andouille sausage, sliced
- 1 cup (150g) sliced okra
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 4 cups (960ml) chicken broth
- 1 can (14oz) diced tomatoes
- 2 tablespoons (30ml) olive oil
- 2 tablespoons (30g) all-purpose flour
- 1 teaspoon (5ml) smoked paprika
- 1 teaspoon (5ml) dried thyme
- 1 teaspoon (5ml) dried oregano
- Salt and pepper to taste
- Cooked rice (for serving)
- Fresh parsley for garnish
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add olive oil, chicken, and sausage. Cook until lightly browned, about 5 minutes. Remove and set aside.
- Add onion, bell pepper, celery, and garlic. Sauté for 3-4 minutes until softened.
- Stir in flour and cook for 1-2 minutes to form a roux.
- Add chicken broth, diced tomatoes, smoked paprika, thyme, oregano, salt, and pepper. Stir to combine.
- Return the chicken and sausage to the Instant Pot. Add okra and stir to combine.
- Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 15 minutes.
- Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release.
- Serve hot over cooked rice, garnished with fresh parsley.
- Tip: Add a dash of hot sauce for extra heat.
