Ingredients

  • 1 pound (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 pound (450g) andouille sausage, sliced
  • 1 cup (150g) sliced okra
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 4 cups (960ml) chicken broth
  • 1 can (14oz) diced tomatoes
  • 2 tablespoons (30ml) olive oil
  • 2 tablespoons (30g) all-purpose flour
  • 1 teaspoon (5ml) smoked paprika
  • 1 teaspoon (5ml) dried thyme
  • 1 teaspoon (5ml) dried oregano
  • Salt and pepper to taste
  • Cooked rice (for serving)
  • Fresh parsley for garnish

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Add olive oil, chicken, and sausage. Cook until lightly browned, about 5 minutes. Remove and set aside.
  2. Add onion, bell pepper, celery, and garlic. Sauté for 3-4 minutes until softened.
  3. Stir in flour and cook for 1-2 minutes to form a roux.
  4. Add chicken broth, diced tomatoes, smoked paprika, thyme, oregano, salt, and pepper. Stir to combine.
  5. Return the chicken and sausage to the Instant Pot. Add okra and stir to combine.
  6. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 15 minutes.
  7. Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release.
  8. Serve hot over cooked rice, garnished with fresh parsley.
  9. Tip: Add a dash of hot sauce for extra heat.
