Ingredients

  • 1 pound (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup (200g) long-grain rice
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 cup (240ml) tomato puree
  • 2 cups (480ml) chicken broth
  • 1 teaspoon (5ml) smoked paprika
  • 1 teaspoon (5ml) curry powder
  • 1 teaspoon (5ml) thyme
  • 2 tablespoons (30ml) vegetable oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Add vegetable oil, chicken, and onion. Cook until the chicken is lightly browned, about 5 minutes.
  2. Add garlic, bell pepper, tomato puree, smoked paprika, curry powder, thyme, salt, and pepper. Stir to combine.
  3. Add rice and chicken broth. Stir to combine.
  4. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 10 minutes.
  5. Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release.
  6. Fluff the rice with a fork and serve hot, garnished with fresh parsley.
  7. Tip: Add a side of fried plantains for a traditional touch.
