Ingredients
- 1 pound (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup (200g) long-grain rice
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 cup (240ml) tomato puree
- 2 cups (480ml) chicken broth
- 1 teaspoon (5ml) smoked paprika
- 1 teaspoon (5ml) curry powder
- 1 teaspoon (5ml) thyme
- 2 tablespoons (30ml) vegetable oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add vegetable oil, chicken, and onion. Cook until the chicken is lightly browned, about 5 minutes.
- Add garlic, bell pepper, tomato puree, smoked paprika, curry powder, thyme, salt, and pepper. Stir to combine.
- Add rice and chicken broth. Stir to combine.
- Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 10 minutes.
- Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release.
- Fluff the rice with a fork and serve hot, garnished with fresh parsley.
- Tip: Add a side of fried plantains for a traditional touch.
