Ingredients
- 1 pound (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons (30ml) olive oil
- 2 tablespoons (30ml) lemon juice
- 2 cloves garlic, minced
- 1 teaspoon (5ml) dried oregano
- 1 teaspoon (5ml) smoked paprika
- Salt and pepper to taste
- Tzatziki sauce (for serving)
- Pita bread or rice (for serving)
- Toppings: lettuce, tomatoes, red onion
Instructions
- In a bowl, mix olive oil, lemon juice, garlic, oregano, smoked paprika, salt, and pepper. Add chicken and marinate for at least 30 minutes (or overnight).
- Thread the marinated chicken onto skewers.
- Set the Instant Pot to ‘Sauté’ mode. Add the chicken skewers and cook until lightly browned, about 5 minutes.
- Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 5 minutes.
- Once the cooking cycle is complete, perform a quick release of the pressure.
- Serve hot with tzatziki sauce, pita bread or rice, and your favorite toppings.
- Tip: Grill the skewers for a few minutes after cooking for a charred flavor.
