Ingredients

  • 1 pound (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons (30ml) olive oil
  • 2 tablespoons (30ml) lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon (5ml) dried oregano
  • 1 teaspoon (5ml) smoked paprika
  • Salt and pepper to taste
  • Tzatziki sauce (for serving)
  • Pita bread or rice (for serving)
  • Toppings: lettuce, tomatoes, red onion

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, smoked paprika, salt, and pepper. Add chicken and marinate for at least 30 minutes (or overnight).
  2. Thread the marinated chicken onto skewers.
  3. Set the Instant Pot to ‘Sauté’ mode. Add the chicken skewers and cook until lightly browned, about 5 minutes.
  4. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 5 minutes.
  5. Once the cooking cycle is complete, perform a quick release of the pressure.
  6. Serve hot with tzatziki sauce, pita bread or rice, and your favorite toppings.
  7. Tip: Grill the skewers for a few minutes after cooking for a charred flavor.
