Ingredients
- 1 pound (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon (5ml) ground cumin
- 1 teaspoon (5ml) ground coriander
- 1 teaspoon (5ml) ground cinnamon
- 1/2 teaspoon (2g) ground ginger
- 1/2 cup (75g) dried apricots, chopped
- 1/4 cup (35g) sliced almonds
- 2 cups (480ml) chicken broth
- 2 tablespoons (30ml) olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
- Cooked couscous or rice (for serving)
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add olive oil, chicken, and onion. Cook until the chicken is lightly browned, about 5 minutes.
- Add garlic, cumin, coriander, cinnamon, ginger, salt, and pepper. Stir to combine.
- Add dried apricots, sliced almonds, and chicken broth. Stir to combine.
- Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 15 minutes.
- Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release.
- Serve hot over cooked couscous or rice, garnished with fresh cilantro.
- Tip: Add a drizzle of honey for a touch of sweetness.
