Ingredients

  • 1 pound (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon (5ml) ground cumin
  • 1 teaspoon (5ml) ground coriander
  • 1 teaspoon (5ml) ground cinnamon
  • 1/2 teaspoon (2g) ground ginger
  • 1/2 cup (75g) dried apricots, chopped
  • 1/4 cup (35g) sliced almonds
  • 2 cups (480ml) chicken broth
  • 2 tablespoons (30ml) olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Cooked couscous or rice (for serving)

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Add olive oil, chicken, and onion. Cook until the chicken is lightly browned, about 5 minutes.
  2. Add garlic, cumin, coriander, cinnamon, ginger, salt, and pepper. Stir to combine.
  3. Add dried apricots, sliced almonds, and chicken broth. Stir to combine.
  4. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 15 minutes.
  5. Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release.
  6. Serve hot over cooked couscous or rice, garnished with fresh cilantro.
  7. Tip: Add a drizzle of honey for a touch of sweetness.
