Ingredients
- almond flour
- granulated sugar
- eggs
- unsalted butter
- vanilla extract
- baking powder
- salt
- slivered almonds
Instructions
- Prepare your Instant Pot by placing the trivet at the bottom of the pot and adding 1 cup of water. This water will create steam for cooking the cake.
- In a mixing bowl, combine the almond flour, sugar, baking powder, and salt. Whisk them together until there are no lumps.
- In another bowl, beat the eggs. Then add the melted butter and vanilla extract. Mix well until combined.
- Pour the wet ingredients into the dry ingredients. Stir until everything is well combined. Be careful not to overmix; just mix until you don’t see dry flour.
- Line a 7-inch round cake pan with parchment paper for easy removal of the cake. Pour the batter into the prepared pan.
- Sprinkle the slivered almonds on top of the batter.
- Cover the cake pan tightly with aluminum foil to prevent water from getting in.
- Place the covered cake pan on top of the trivet inside the Instant Pot.
- Seal the Instant Pot lid and set it to cook on high pressure for 35 minutes.
- Once the cooking time is up, carefully perform a quick release to release the steam. Open the lid.
- Remove the cake pan from the pot and allow it to cool for about 10 minutes before removing from the pan.
- Once it’s cooled, remove the parchment paper and serve your Instant Pot Almond Cake warm or at room temperature.
