Ingredients

  • almond flour
  • granulated sugar
  • eggs
  • unsalted butter
  • vanilla extract
  • baking powder
  • salt
  • slivered almonds

Instructions

  1. Prepare your Instant Pot by placing the trivet at the bottom of the pot and adding 1 cup of water. This water will create steam for cooking the cake.
  2. In a mixing bowl, combine the almond flour, sugar, baking powder, and salt. Whisk them together until there are no lumps.
  3. In another bowl, beat the eggs. Then add the melted butter and vanilla extract. Mix well until combined.
  4. Pour the wet ingredients into the dry ingredients. Stir until everything is well combined. Be careful not to overmix; just mix until you don’t see dry flour.
  5. Line a 7-inch round cake pan with parchment paper for easy removal of the cake. Pour the batter into the prepared pan.
  6. Sprinkle the slivered almonds on top of the batter.
  7. Cover the cake pan tightly with aluminum foil to prevent water from getting in.
  8. Place the covered cake pan on top of the trivet inside the Instant Pot.
  9. Seal the Instant Pot lid and set it to cook on high pressure for 35 minutes.
  10. Once the cooking time is up, carefully perform a quick release to release the steam. Open the lid.
  11. Remove the cake pan from the pot and allow it to cool for about 10 minutes before removing from the pan.
  12. Once it’s cooled, remove the parchment paper and serve your Instant Pot Almond Cake warm or at room temperature.
