Ingredients

  • 6 medium apples, peeled, cored, and sliced
  • 1 tablespoon lemon juice
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 3/4 cup old-fashioned oats
  • 1/3 cup all-purpose flour
  • 1/3 cup brown sugar, packed
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/4 teaspoon vanilla extract

Instructions

  1. Once prepared, these apples will sit on the bottom of your Instant Pot. In a large bowl, combine the sliced apples with lemon juice, granulated sugar, brown sugar, 1 tablespoon all-purpose flour, cinnamon, nutmeg, and salt. Stir until the apples are well coated.
  2. Add 1/2 cup of water to the bottom of the Instant Pot. This helps generate steam which will cook your apples perfectly.
  3. Pour the apple mixture into the Instant Pot, spreading it out evenly.
  4. In a medium-sized bowl, mix the oats, the remaining flour, brown sugar, and salt. Stir to combine evenly. Add the melted butter and vanilla extract to the dry ingredients, stirring until the mix looks like damp crumbs.
  5. Sprinkle the oat topping evenly over the apples in the Instant Pot. Make sure it covers all the apples for a deliciously even finish.
  6. Seal the Instant Pot with the lid, ensuring the valve is set to the sealing position. Set the Instant Pot to manual ‘Pressure Cook’ mode for 8 minutes.
  7. After the cooking time is up, do a Quick Release by turning the valve to the venting position, being careful to keep your hands clear of the steam.
  8. Open the lid carefully once the pressure is fully released. Use a large spoon to serve the warm apple crisp into bowls. Optionally, top with vanilla ice cream or whipped cream for an extra treat.
