Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large ripe bananas, mashed
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1/4 cup whole milk

Instructions

  1. First, prepare your Instant Pot by ensuring it is clean and dry. Then, set up your Instant Pot with a trivet inside the inner pot.
  2. In a medium-sized bowl, whisk together 1 cup of all-purpose flour, 1 teaspoon of baking soda, and 1/4 teaspoon of salt until well combined.
  3. In a separate large mixing bowl, mix 1/2 cup of melted unsalted butter and 3/4 cup of granulated sugar until smooth.
  4. Add 2 mashed large ripe bananas, 1 large egg, and 1 teaspoon of pure vanilla extract to the butter-sugar mixture. Stir until well incorporated.
  5. Slowly add the dry ingredients to the wet ingredients, alternating with 1/4 cup of whole milk. Stir gently until just combined. Do not overmix to keep the bread moist.
  6. Grease a small bundt pan or any round baking dish that fits into your Instant Pot, and pour the batter into it.
  7. Cover the pan with aluminum foil to prevent condensation from dripping onto the bread.
  8. Pour 1 cup of water into the inner pot of the Instant Pot. Carefully place the pan onto the trivet inside the pot.
  9. Secure the lid of the Instant Pot and ensure the valve is set to sealing. Select the ‘Pressure Cook’ or ‘Manual’ setting, set the timer to 45 minutes at high pressure.
  10. Once the cooking cycle is complete, allow the pressure to release naturally for about 10 minutes before performing a quick release of any remaining pressure.
  11. Carefully remove the pan from the Instant Pot. Remove the foil and let the banana bread cool in the pan on a wire rack for at least 10 minutes before removing it from the pan.
