Ingredients

  • 4 cups stale French bread or brioche (cubed)
  • 3 large eggs
  • 1.5 cups whole milk
  • 3/4 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 tsp salt
  • 1 cup water (for Instant Pot)
  • Non-stick cooking spray

Instructions

  1. Prepare the pan: Lightly grease a 7-inch round baking pan with non-stick spray.
  2. Make the custard: In a large bowl, whisk eggs, milk, sugar, cocoa powder, vanilla extract, and salt until smooth. Tip: Sift cocoa powder to avoid lumps.
  3. Combine ingredients: Add bread cubes and chocolate chips to the custard mixture. Gently press bread into the liquid to soak. Let sit for 10 minutes.
  4. Assemble: Pour mixture into the prepared pan. Cover tightly with aluminum foil.
  5. Cook in Instant Pot: Pour 1 cup water into the Instant Pot. Place the trivet inside. Lower the pan onto the trivet. Seal lid and set to High Pressure for 25 minutes. Let pressure release naturally for 10 minutes, then quick-release remaining pressure.
  6. Optional crispy top: Preheat oven broiler to 450°F. Carefully remove foil from the pan and broil pudding for 2-3 minutes until the top is golden. Watch closely to avoid burning!
  7. Serve: Let cool slightly. Serve warm with whipped cream or ice cream. Tip: Pudding will firm up as it cools.
