Ingredients
- 4 lbs pork shoulder (boneless, trimmed of excess fat)
- 1 cup apple cider (not vinegar)
- 1/2 cup apple cider vinegar
- 1/4 cup brown sugar
- 1/4 cup Dijon mustard
- 1 tablespoon paprika
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 onion (sliced)
- 2 cloves garlic (minced)
Instructions
- Start by cutting the pork shoulder into 4 large chunks to help it fit in the Instant Pot more easily and cook evenly.
- In a small bowl, mix together the brown sugar, paprika, onion powder, garlic powder, salt, black pepper, and cayenne pepper. Rub this spice mixture all over the pork pieces.
- Set your Instant Pot to ‘Sauté’ mode. Once hot, add a splash of olive oil. Sear the pork pieces on all sides until they are browned (about 2-3 minutes per side). Searing is optional but adds a nice flavor.
- Remove the pork and set aside. Add the sliced onion and minced garlic to the Instant Pot, stirring and sautéing for about 2 minutes until fragrant.
- Pour in the apple cider and apple cider vinegar, using a wooden spoon to scrape up any browned bits at the bottom—this is called deglazing and will add more flavor to the dish.
- Place the pork pieces back into the Instant Pot along with any juices that have accumulated. Add the Dijon mustard by spreading it over the top of the pork.
- Lock the lid on the Instant Pot, making sure the valve is set to ‘Sealing’. Select the ‘Pressure Cook’ or ‘Manual’ setting and set the cooking time to 60 minutes on HIGH pressure.
- Once the cooking cycle is complete, allow the pressure to release naturally for about 10 minutes, then turn the valve to ‘Venting’ to release any remaining pressure. Be careful of the steam.
- Carefully remove the lid, then use two forks to shred the pork directly in the pot, mixing it with the cooking juices.
- Taste and adjust seasoning, adding more salt or pepper if needed. For a thicker sauce, you can switch to ‘Sauté’ mode after shredding and let the liquid simmer, stirring occasionally, until reduced to your preference.
- Serve the pulled pork on buns, in tacos, or alongside mashed potatoes. Consider garnishing with fresh herbs like parsley or cilantro for extra color and flavor.
