Ingredients
- 2 lbs pork shoulder, cut into 1-inch pieces
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 5 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1/4 cup rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon crushed red pepper flakes (optional)
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- Start by cutting the pork shoulder into 1-inch pieces. Make sure to remove any large pieces of fat for a lean meal.
- Set your Instant Pot to the ‘Sauté’ function. Add the vegetable oil and let it heat up for about 1 minute.
- Once the oil is hot, add the chopped onion. Sauté for 3-4 minutes or until the onion is translucent.
- Add the minced garlic and ginger to the pot, stirring continuously for about 30 seconds until fragrant.
- Carefully add the pork pieces to the pot. Stir well to coat the pork with the onion, garlic, and ginger mixture.
- In a small bowl, mix together the soy sauce, brown sugar, rice vinegar, sesame oil, and crushed red pepper flakes (if using). Pour this mixture over the pork.
- Close the lid of the Instant Pot, ensuring that the steam release valve is set to ‘Sealing’. Select ‘Pressure Cook’ or ‘Manual’ and set the time for 25 minutes on high pressure.
- Once the cooking time is up, allow the pressure to release naturally for about 10 minutes before carefully turning the steam release valve to ‘Venting’ to release any remaining pressure.
- Open the lid and stir the pork. It should be tender and well-coated in the sauce. If you prefer a thicker sauce, switch back to the ‘Sauté’ mode and simmer for a few minutes.
- Serve the pork hot, garnished with sliced green onions and sesame seeds. This dish pairs beautifully with steamed rice or noodles.
